The Softest Chocolate Chip Cookies

2 1/4 cup flour

1 tsp baking soda

1/2 tsp salt

1 cup butter

1/2 cup sugar

3/4 cup brown sugar

1 pkg. instant vanilla pudding mix

2 tsp vanilla

1 egg

1/2 pkg chocolate chips

1/2 cup nuts (optional)

Stir baking soda, flour and salt; set aside.

Directions:

Combine butter, sugars and pudding mix, beating until fluffy.

Add vanilla and egg; beat until smooth.

Add dry ingredients; mix well.

Stir in chocolate chips and nuts.

Bake at 375° for 8-10 minutes.

My Little Project

I totally copied this idea from these great prints over at Etsy. But I had my own rules and I wanted a size that they were not offering. And the price was not in my budget. So with a little design time on the computer & the printer, I have 5 lovely pictures hanging in the playroom to remind the kids a few rules they should follow. I got the idea to hang them this way from here & here.

A few months ago I made a "blog", Woody's Arcade, for my kids. It has the name and a pic (for the 5 year old) of all their favorite sites and some new ones. I left my site address in the comments section and she mentioned the little blog that I made in her article. She had some really nice things to say...

Woody's Arcade (a mom set this blog up for her child, specifically to direct him to his favorite sites. What an amazing idea!)

She has also made a button that you can post on your site that lists kids sites separated by type. I have also made a button for anyone that would like to link to Woody's Arcade. Email me if you want it! I cant seem to make the code work in the post!!

This recipe was a little time consuming, but it turned out really good. I couldn't find "farmers cheese" but used queso cheese and it was just fine. Could of used more though. I LOVE cheese! Never had tomatillos before. They are surprisingly good. Wasn't sure if I was gonna like it!

Chicken Chilaquiles

TOTAL TIME: 35 MIN 4 TO 6 SERVINGS

Chilaquiles is a Mexican dish originally created to use up leftovers. It's traditionally made with corn tortillas, chiles, cheese and meat that are either tossed together and sauteed or layered like lasagna and baked.
ingredients
1 1/2 pounds fresh tomatillos—husked, rinsed and halved
2 large garlic cloves
1 large jalapeno—halved lengthwise, stemmed and seeded
1/4 cup packed cilantro
2 tablespoons vegetable oil
1 teaspoon ground cumin
1/2 teaspoon coriander
Salt and freshly ground pepper
1 pound shredded cooked chicken (3 cups), at room temperature
1 1/2 cups shredded pepper Jack cheese (6 ounces)
1/2 cup farmer cheese (4 ounces)
1 scallion, sliced
One 6-ounce bag tortilla chips (8 cups)
1/4 cup sour cream
directions
1. Preheat the oven to 450°. In a blender or food processor, puree the tomatillos, garlic, jalapeno and cilantro until smooth. In a large saucepan, heat the oil until shimmering. Add the cumin and coriander and cook over high heat until fragrant, 30 seconds. Add the tomatillo puree, bring to a boil and cook until the sauce loses its bright green color, 3 minutes. Season with salt and pepper.
2. In a medium bowl, toss the chicken with 3/4 cup of the pepper Jack, the farmer cheese, scallion and half of the tomatillo sauce; season with salt and pepper. In another bowl, toss the tortilla chips with the remaining sauce.
3. Spread half of the chips in an 8-by-11-inch baking dish; top with the chicken and cover with the remaining tortilla chips. Don't pack the chips down. Dollop the sour cream over the chips and sprinkle with the remaining 3/4 cup of pepper Jack. Bake for 15 minutes, or until the cheese is browned. Serve at once.

I love to spend hours browsing antique stores. I love bringing home something from the past. It has always interested me since I was little. Wondering who used the item. If they got it for a gift, if they bought it a dime store or if it was lovingly handmade. If they cherished it, if it was handed down or maybe if they "regifted it". ha ha

I love the hunt, finding that rare piece, finding something from your childhood...

After realizing I cant bring home EVERYTHING I love...when I find a good deal, I'll buy it and bring it here to share!

We love chicken wings around here, so I thought I would try this recipe. I usually make fried rice once a week anyways, so I just paired the chicken legs with the rice. Very tasty. I think I might try it in the crock pot next time.

SESAME GINGER GLAZED CHICKEN LEGS

1/2 cup soy sauce
1/2 cup honey
1 tablespoon roasted sesame seeds
3 teaspoons fresh ginger, minced
2 lbs chicken legs (I use skin on)

Blend the soy sauce, honey, sesame seeds, and ginger well. Place the legs in a glass baking dish and baste with the sauce. Bake in a 400 degree oven for 50-55 minutes,or until the chicken is done,basting every 15 minutes or so with the sauce.

I doubled the recipe. (BIG family)

What to do with the Fireplace?

Apartment Therapy post last week-Decorating a Non-Working Fireplace. I too have had this dilemma since moving into our new house. Our fireplace is perfectly fine to use, but we have chosen not to use it because we have our flatscreen tv on the mantle and we were worried of heat/smoke damage. So I have saved a few images to get some ideas to dress up the fireplace a little.

I have seen this on may blogs over the past few months and fell in love with the idea. My Favorite by far, but I did have some reservations. You know when you put up a new fence and the wood is fresh and golden and then a few months later, after it has been in the weather, it turns that yucky grey color? Will this fresh looking wood that you stack in fireplace-will it turn grey and ugly? Or will it stay fresh and beautiful because it is not out in the elements?

I saw this idea at Modern Cottage. "But a fireback is basically a slab of cast iron (or steel) that sits at the back of your fireplace and acts as a heat radiator. It can make your fireplace up to 50% more efficient." Not really as decorative but still its better than a empty space and it serves two purposes. But this led me to something else....

Fireplace Facings are decorative pieces of tin that are mounted to the face of the fireplace. I like this idea because it closes off the massive hole. Oh, and I love the paisleys!!!

Or you could always go with the ole standby- the white birch logs. Did you know you can buy a box of logs for 19.95?

Or the incredibly predictable fireplace candelabra! Ugh, that's exactly what I have in there now...just the candles not the "abra".

The comments section over at Apartment Therapy didn't offer really any other great ideas...so what do you think?

1 cup mayo

1 cup sour cream

2 medium tomatoes, chopped

1 lb. bacon, cooked & crumbled

Combine all ingridients and stir well. Serve with triscuits.

Breast Cancer Awareness

My sister was 32 years old when she was diagnosed with breast cancer. She noticed that her nipples were bleeding and went to her doctor. After many tests and surgery, she found out it was cancer. She had a mastectomy and her lymph nodes taken out. She went through months of chemo and now has been cancer free for 2 years. Thank goodness she went to the doctor. Even though I am only 30, I now have mammograms every year.

Everybody knows that October is Breast Cancer Awareness Month. So in honor or memory of anyone that you know who has had breast cancer make a donation at the Susan G Komen website. Also you can Race for the Cure. You can find out if your city is hosting a race here.

I am so sorry that I have been away for so long. I have been taking a much needed break. Also we found a house three weeks ago! We put a contract on the house and will close this month, but we are still waiting on the appraisal. If any of you have bought a house before, you know that could "make" or "break" a deal, so we are just waiting. We should find out something today. You know, I started this blog to keep track of things that I wanted for my new house. Now it is finally here!!! I cant believe it!

The house is great! It sits on four acres, still close to my parents, work, good schools and shopping. It has three bedrooms, 2.5 baths. We will be adding a master bedroom as soon as we can and there is a ton of other "updates" that we have to do. Carpet, paint, new appliances, tile...

I have started another blog that has pics of the new house and will chronicle the progress of the house. I don't want to give you the link just yet since we haven't closed on the house yet. I don't want to jinx it. I also want to get ideas and your opinions of decorating ideas!

I still want to keep this blog up too. It will be tough. I am hoping to post at least one item a day for a while just to keep you guys coming back. I have tons of stuff filed in my wists account.

So I am off for now, thank you to all of you who kept checking in daily to see if I had returned!

Another interesting kitchen device found in Germany, the milk watcher! How many times have you had milk or pasta water quickly boil over on you? This ceramic disk sits on the base of the pan; as the liquid heats the increasingly larger bubbles raise the disk up and down causing it to rattle against the pan, getting your attention. The faster the boil, the more activity and the louder the rattle.
